Puttu is made by slowly adding water to ground and roasted rice until it resembles breadcrumbs, then added to the puttu kutti and steamed with layers of coconut.

Mix the four with 1/2 of the grated coconut .In a glass mix some salt withwater .. Add the water little by little to the flour and mix well..The mixing should be proper so that the flour should not be turn into dough form.It should be in the powdered form only but wet enough for steaming.. I made Chiratta Puttu with red rice, which is rich in iron, magnesium, calcium, zinc, dietary fibre and more. Place the puttu kutti on puttu kudam.

Notes.

grind to slightly coarse powder when the rice is slightly wet. Put the small steel plate with holes (puttu chillu), inside the regular puttu kutti / chiratta puttu maker mould. Cover with the lid. Now add the puttu podi ( just loosely fill it with rice flour, do not press). It take it’s name from the specially designed vessel used to cook which has got the shape of a chiratta (Malayalam word for the shell which covers the coconut), hence the name ‘chiratta puttu’. Top with some more grated coconut, if you wish. Top with 1 tsp coconut.
