Pure MgCl2 would be 25.5% magnesium by weight. Nigari, or bittern, is the salt solution formed when halite (table salt) precipitates from seawater or brines. When seawater or saltwater taken from a saltpan is allowed to evaporate, first of all calcium sulfate (also known as gypsum, which is used in cement and is known to cause kidney stones) begins to crystallize. Our brine is very, very rich in minerals. Nigari is made by drawing up and letting seawater evaporate by exposing it to sunlight and heat.
